Oatmeal/Pancake Tower

This is the Sour Cream version
You can build this as high as you want, but I usually use 3-4 pancakes.
Note: I often make up a large batch of pancakes on the weekend and then freeze the leftovers for during the week. This recipe also works well with the frozen waffles you can buy in the grocery store.
Add to a microwavable bowl:
1 pkg |
Instant Oatmeal (I like Maple Brown Sugar for this recipe) |
1-2 T |
Raisins |
1/3 C |
Apple Juice |
1/3 C |
Milk |
Microwave on high for 1-2 minutes being careful it doesn't boil over.
Add
1-2 T |
Walnuts |
Warm up
| 3-4 | Pancakes (more if you like) |
When oatmeal is ready, layer pancakes with oatmeal to form a stack. Slice the pancake stack into wedges as you would a cake or pie and top with:
| 1/4 C | Apple Sauce |
| Maple Syrup | |
| 1 T | Raisin Bran Crunch Cereal |
I will often add one of the following as well:
| 2 T | Cottage Cheese |
| 2 T | Yogurt |
| 2 T | Sour Cream |
| Whipped Cream |
Breakfast, Noon or Night.
